The Simple Supper Menu
Sausage Tortellini Soup
A winning combination of Italian sausage, kale (sub spinach if you prefer, though it will take less time to cook), broth, cream and seasonings, this soup recipe couldn’t be easier! That combined with the fact that it only takes about 30 minutes to make means it’s the perfect recipe for a cold, January evening when you have no idea what to cook for dinner! If you’d like to try it out, we love this recipe from The Cozy Cook.
Bacon Cheddar Onion Biscuits
Want a hearty bread to eat alongside your soup? These biscuits from the Pioneer Woman are perfect! Featuring peppered bacon, deeply sauteed onions and generous amounts of cheese, all folded into a biscuit batter, these muffins might become a family favorite. Since they do involve a few steps to make, we recommend starting your dinner prep with these, then starting your soup. We promise, you won’t be disappointed. Make the biscuits.
Every Day Salad
Soup and salad is a staple simple supper, but salads don’t have to be involved or fussy. This recipe from Gimme Some Oven features spring greens, cucumber, red onions and toasted nuts. (She suggests pepitas or pine nuts, but use whatever you have or like. We prefer pecans.) Topped with a simple vinaigrette (make the one in the recipe or use your favorite bottled version), this salad means you can get dinner on the table in under an hour AND include vegetables in the menu.
