Recipe: Cheesy Potato Soup

As we ease into March, many of us have begun to look forward to spring. But these final days of winter can be a little unpredictable, so if you find yourself needing a hearty, cheesy potato soup to warm you up, here's the recipe for you!

Ingredients
2/3 cups flour
4 baked potatoes (scoop out the potatoes and discard the skins)
3 cups chicken broth
3 cups milk
4 cups cheese (cheddar or whatever you prefer)
5 green onions, chopped
9 slices of bacon, cooked and crumbled
salt and pepper to taste
8 oz cream cheese
Directions
Melt butter in the bottom of a large saucepan or stock pot. When melted, whisk in flour and cook for about 1 minute.
Gradually add liquids (broth and milk) over medium heat, stirring constantly, especially after each addition.
Stir frequently (and patiently) until the mixture thickens to your desired consistency.
Add potatoes, bacon, onions and cheeses. Stir until melted.
Serve and enjoy. Serve with a crisp green salad for a soup and salad night, or with a hearty piece of french bread on a cold night.
