Recipe: Baked Corn

Corn pudding, baked corn, corn casserole—whatever you call it, this is a recipe you want to keep!
Growing up, we called this side dish baked corn, truly a Show-Me State way to describe a recipe for exactly what it is. After living in the South, I’ve heard it called corn pudding and corn casserole, but no matter what it’s called, it’s a great side corn side dish to add to your table, especially with holidays like Easter coming up!

Baked Corn Ingredients
2 cans cream style corn (If you’re industrious and cut corn off the cob to freeze last summer, feel free to use that, too!)
1 cup milk
1 ½ teaspoon flour
4 eggs
2 tablespoons sugar
Salt and pepper to taste
Baked Corn Directions
In a large bowl, combine corn and all other ingredients.
Pour into an 8x8 square baking pan.
Bake at 350 degrees until golden brown, usually 30-45 minutes. You’ll want to keep an eye on it. The goal is that the casserole is set and slightly browned on the top.

NOTE: This recipe does not make a huge amount. If you’re looking to fill a 9x13 pan, please feel free to double the recipe.
