Recipe: Charred Corn Caesar Salad

Salads are an easy and healthy (depending on what type of dressing and how much you use) addition to most meals. From garden or chopped to specialty salads, you can't miss with a mix of greens, veggies and more.


This recipe, inspired by Mexican street corn, is a easy and flavorful take on the traditional caesar salad and can be made in a matter of minutes.

Ingredients

  • 1 can yellow corn (drained) or 1.5 cup frozen corn

  • 2 teaspoons olive oil

  • 2 teaspoons chili powder or elote seasoning

  • Salt and pepper to taste

  • Romaine lettuce, washed and chopped/torn

  • 1/3 cup Cojita cheese, crumbled

  • Caesar salad dressing of your choice

Directions

  1. Wash romaine and set aside. Preheat oven to 425º.

  2. Place drained or frozen corn on a rimmed baking sheet. Drizzle with olive oil and spices.

  3. Roast corn in the oven for about 15 minutes until slightly charred. Cool for 5-8 minutes.

  4. While waiting for the corn to cool, chop or tear romaine into a bowl or serving dish. Top with charred corn, Cojita cheese and your favorite caesar dressing.

  5. Enjoy!
