The perfect snack for The Bookery Book Club’s June meeting

The first episode of The Bookery Podcast dropped today, focused entirely on Hannah Brencher’s The Unplugged Hours, our June selection. If you’re looking for the perfect snack to pair with a steaming cup of coffee, we’ve got you covered!

We’ve been looking for a recipe that delivers soft, delicious oatmeal chocolate chip cookies—ever made them and have them turn out dry and hard?—and this one from Danielle at Live Well Bake Often delivers! Another plus: while some cookie recipes make enormous amounts, this one makes a manageable two dozen, perfect for a family treat or a small get-together.

Oatmeal Chocolate Chip Cookie Ingredients

  • 1 cup all-purpose flour

  • 1 tsp cinnamon (Danielle’s recipes calls for ½ tsp, but we really love cinnamon)

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 ½ cups old-fashioned rolled oats (Don’t sub quick oats! They change the texture and can make your cookies hard or crunchy.)

  • ½ cup butter

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup chocolate chips (you can use whatever type of chocolate you prefer, but we’d suggest semi-sweet chips. Or a mixture of semi-sweet and butterscotch chips.)

Oatmeal Chocolate Chip Cookie Directions

  1. Whisk together flour, cinnamon, baking soda and salt, then stir in the oats. Set aside.

  2. In a medium mixer bowl, cream the butter. Add the sugars and cream until fully incorporated.

  3. Add the egg and vanilla. Mix well, scraping down the sides of the bowl as needed.

  4. Add the dry ingredients by thirds, mixing well after each addition. Mix until just combined, then stir in the chocolate chips.

  5. Cover dough and refrigerate for at least 30 minutes.

  6. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper. (Highly recommend this step as it will make your cleanup a smidge easier!)

  7. Using a cookie scoop, scoop the cookie dough onto the baking sheets. Gently press down each ball of dough to slightly flatten.

  8. Bake at 350 degrees F for 10-13 minutes or until the tops of the cookies are set.

  9. Remove from oven and cool on baking sheets for 5-10 minutes before transferring to a wire rack.

  10. ENJOY!
