Need some breakfast ideas?

From on-the-go ideas to prep ahead favorites, we’ve got a few suggestions to liven up your breakfast routine


Fall is well on its way, and, for many of us, that means settling into slightly different schedules. If your mornings feel a little rushed or you fell stuck in a breakfast rut, we’ve got a few breakfast ideas to liven up one of our favorite meals!

Breakfast on the Go

Let’s all just be authentic and honest for a minute: as beautiful as that traditional breakfast spread looks, who has the time to cook like that every morning? Some days, we’re doing our best to get out the door with coffee, right? So if you’re facing a hurried morning but still want to offer an easy, healthy, homemade breakfast, try a few of these options.


Yogurt Parfait

The night before, layer yogurt and your favorite fruits and berries. Feel free to add in some chia seeds or whatever else you like. In the morning, top with crunchy granola and go. You’ve got a lot of protein; you can control sugar by using a flavored Greek yogurt with a lower sugar content (we like Chobani’s Zero Sugar in vanilla); and you’re enjoying some fruit, which to be honest, we could all probably add more of to our diets!


Toast with Toppings

Toast is a perennial breakfast favorite, but you can make it extra special with toppings! Try mashed avocado sprinkled with everything bagel seasoning. Or whipped cream cheese, blackberries, sliced almonds and a drizzle of honey. Like goat cheese? Get a flavored version and enjoy it on warm toast with honey. And then there’s the stand-bys: peanut butter or Nutella topped with sliced bananas or strawberries. Easy, delicious and sure to please! Need ideas? Check these out.


Breakfast Cookies

Who doesn’t love cookies, especially for breakfast? These are something you’d have to make ahead, but can be an easy way to add some whole grains and dried fruits to your diet. You can easily find a million recipes with a quick Google search, but we’re a bit partial to this one from Family Food on the Table.



Got a little time to cook?

Oatmeal

Whether you’re making old fashioned oats or steel cut, oatmeal is a great way to start your morning. Just add oats and water or milk to a small saucepan (usually about ½ cup oats to every cup of liquid), add in some sweetener (brown sugar, honey, whatever floats your boat but don’t go crazy, especially if you’re trying to watch sugar intake), and dried fruit of your choice. Cook over medium heat for about five minutes, stir, add seasonings (like cinnamon) and toppings (like fresh fruits, nuts or seeds) and enjoy. If you think the oatmeal seems a bit too thick, you can thin it out to a consistency you like with a little milk (and/or butter if you’re being adventurous).


Make-Ahead Breakfast Burritos

Have some time on the weekend? Create your own breakfast burritos using tortillas, scrambled eggs, cooked sausage or bacon, grilled veggies, cheese, salsa—whatever you like in a breakfast burrito! Roll separately, wrap in plastic wrap and aluminum foil, then defrost and warm to eat for a delicious breakfast during the week! Pair with fruit, yogurt or enjoy all by itself!


Skillet Scramble

Cook up some hashbrowns or sweet potato, then mix with scrambled eggs, sauteed veggies, tomatoes, bacon or sausage (or even black beans) and create your own breakfast skillet. Serve with toast or over toast!


Breakfast Pizza

There are some of you still enjoying leftover pizza for breakfast, like college days, but that’s not what we’re talking about here! Simply use a refrigerated pizza crust, roll it out on your baking sheet and top with scrambled eggs, cheese, bacon, sausage, salsa, whatever you most enjoy to eat at breakfast! You can also add sausage or peppered gravy, if you’d like, or even spread cream cheese on the crust before adding toppings if you’d prefer. This pizza crust is your canvas, so be creative! Prep-Ahead Breakfast Casserole

To be honest, we’d eat breakfast casserole any time of day and consider it a food group all its own. The great thing about breakfast casseroles—well, the great THINGS about breakfast casseroles—are that you can find a recipe for every flavor profile you can think of and you can prep them ahead and bake in the morning for a delicious morning meal. We’ve previously offered a Christmas morning breakfast casserole recipe, but this recipe is next on our list to try.
