Favorite Recipes for Spring: Mandarin Spinach Salad

As April fades into May, we're highlighting one of our favorite salads of the season. Spring is a time for bright flavors and colorful presentation—and this salad has both!


It's perfect as a complement to your main dish, but add some grilled chicken and you've got an easy, delicious lunch or light dinner. Plus, what's not to like when it's easy to make, looks pretty and tastes great?

Mandarin Spinach Salad

  • Bag of baby spinach (8-9 oz.), rinsed

  • 1/2 cup of mandarin oranges, drained

  • 1/2 cup of dried tart cherries (or to taste)

  • 1/4 red onion, sliced very thin

  • 1/4 cup crumbled goat cheese (or to taste)

Combine all ingredients in your serving bowl. Dress with your favorite balsamic dressing or make your own. Here's an easy quick recipe!
