Cookbook Chronicles: Ravioli Spinach Bake

The recipe: Spinach Ravioli Bake

The details: This recipe involves so many things I love: vodka sauce, pesto, ravioli and spinach—with the added benefit of being incredibly easy. It's simply a matter of boiling some water and adding all the ingredients to a dish so the flavors can meld and the cheese can melt.


The adjustments: For once, I really didn't make any adjustments to the recipe. I did end up having to buy two packages of ravioli to get the right amount—and accidentally picked up a spinach and artichoke heart ravioli rather than a second package of cheese ravioli. But instead of heading back to the store, I forged ahead. You can't waste food!


The verdict: I wanted to love this recipe because what's not to like? It's got all these great ingredients and it's something I could pull together easily after a busy day at work. And while it was OK, I didn't love it. Part of the problem was the jarred pesto I used; it's just not my favorite brand or flavor. Now that I know that, I guess I should give this one another try with different products (and all cheese ravioli) and see if I like it better!
