5 Breakfast Recipes to Try

Explore a few new recipes to spice up your morning

A new year is an invitation to try new things, and that extends to new recipes. Looking for ideas of how to liven up your breakfast routine or simply exploring new recipes? We’ve got a few for you to try. 


Berry Cheesecake Overnight Oats

With the current emphasis on eating more protein, overnight oat recipes are everywhere — and some of them just taste bad (in our opinion). Overnight oats can be a fantastic option for starting your day on the right foot, with minimal prep the night before. One recipe we’ve discovered is registered dietician Alex’s Berry Cheesecake Overnight Oats, which she shares at Moderately Messy RD, her website. The recipe includes all the usual overnight oat characters — old-fashioned rolled oats, Greek yogurt, protein powder — but uses a couple of tablespoons of Jell-O sugar-free pudding mix for flavor. Alex shares numerous overnight oat recipes on her website, but this one is our favorite. 




Butter Swim Biscuits

Looking for an easy biscuit recipe that’s sure to please but doesn’t involve a biscuit cutter? While we love a good Pillsbury Grands!™ Butter Tastin’ biscuit, sometimes you want homemade biscuits without all the fuss. If that sounds like you, try these butter swim biscuits from Amanda Rettke at I Am Baker, one of our favorite baking blogs. Butter swim biscuits are baked in a copious amount of melted butter (hence the name), resulting in a crispy outside and a soft, fluffy inside. You also bake them in a square pan and cut them into square biscuits, meaning there’s no rolling pin or biscuit cutter needed. They’re delicious and easy to make, so give them a try! 




Blueberry Sour Cream Coffee Cake

If you prefer a sweet-but-not-too-sweet start to the day, try out Tieghan Gerard’s blueberry sour cream coffee cake at Halfbaked Harvest. Coffee cake can sound intimidating or feel like one step too many, but this recipe is fairly straightforward and easy to follow with a simple batter, the freedom to use fresh or frozen blueberries and ingredients you’re likely to already have on hand. While this isn’t really an option for a busy morning when you’re heading out the door to an appointment, it’s great for the weekend, perfect to make ahead and stores great for a few days of grab-and-go breakfasts. 




Cottage Cheese Egg Breakfast Bake

We love a good breakfast casserole and incorporating cottage cheese is an easy way to add additional protein to the start of your day. If that sounds right up your alley, try out Robin Conley Down’s cottage cheese egg breakfast bake recipe at her website, Real Food Whole Life. This one is simple, easy to adapt to your own preferences and a tasty way to start the day. It takes 35-45 minutes to bake, so it’s not an option for rushed morning, but it’s easy to make ahead, only takes one bowl to prepare and you can keep slices in the fridge for those on-the-go mornings. 




Breakfast Burritos

Breakfast burritos can be a good way to use up that last bit of sausage or bacon, that one potato and all the other fresh veggie and cheese leftovers living rent-free in your fridge and aren’t enough for other recipes. That’s pretty much the approach Jeanine and Jack at Love and Lemons takes with their breakfast burrito recipe which features scrambled eggs, spicy potatoes and more. These are a great weekend breakfast that can be easily frozen for grab-and-go weekday mornings. Feel free to freelance a little and make this recipe your own!
